After recently drooling over sweet potato toast photos on social media, we decided to take a deeper look into this new toast movement. Could sweet potato toast be the new avocado toast?

We think so! For starters, it’s a healthier approach since it’s actual slices of toasted sweet potato vs. plain bread. Secondly, there are endless sweet and savory topping options — and it’s an awesome way to ride out the avocado shortage.

Alas, here are a few of our current favorite ways to top off sweet potato toast:

Almond Butter, Banana Slices, and Cinnamon Toast
Kelsey Preciado of Little Bits Of not only shares three yummy sweet potato toast recipes on her blog, but also gives us step-by-step instructions on how to make the actual toast. We’re especially obsessed with this version which features almond butter, banana slices, and cinnamon.

Who needs french toast when there’s sweet potato toast topped off with coconut cream and strawberries? We spotted this awesome treat on The North Carolina SweetPotato Commission’s Instagram, and think it would make an awesome brunch dish.

When we saw this drool-worthy concoction via the talented Lisa Bryan from Downshiftology on I Quit Sugar, we couldn’t resist. As the dish implies, it consists of sweet potato toast with avocado, cucumber, smoked salmon, and a savory poached egg. Yum!

What would we do without Instagram? Seriously, we’ve found some of our favorite recipes by perusing around — and this is one you don’t want to miss out on. Post yoga session, Anni Kravi, who’s all about plant based foods, topped her toast off with smashed avocado, tempeh, rainbow beets, cucumber, alfalfa, sunflower sprouts, black sesame, ACV, and Himalayan salt.
