So to avoid being labeled a St. Paddy’s Day Grinch at the bar, we’ve found the perfect emerald-hued replacement. Yup, just when you thought green beer and Guinness were the only two beverages to drink on this Irish holiday, along comes this super fresh (and tasty) cocktail.
Pistola of Los Angeles has concocted one unique libation that will keep you from getting pinched. (Who would’ve thought you could put arugula in a cocktail?!) This refreshing green drink is perfect to sip this Thursday. With a peppery arugula puree, tart lime juice, and gin, this will be the perfect savory drink to sip all night long, whether you are Irish or not. Cheers!

Ingredients:
Handful of arugula
Capful of soda water
1/2 ounce simple syrup
1/2 ounce Suze liqueur
3/4 ounce lime juice
2 ounces gin
Balsamic caviar (optional garnish)
Directions:
1. In a shaker tin, place a healthy handful of arugula with a capful of soda water and 1/2 ounce of simple syrup. Muddle it thoroughly down to a paste or puree
2. In a separate cocktail shaker filled with ice, add the arugula puree, Suze, lime juice, and gin
3. Shake then strain into rocks glass with large ice cube and top with balsamic caviar
