Yes, there’s a national holiday for the classic gin & tonic (April 9) and we can’t wait to celebrate. This cocktail is perfect to chill with during breezy, spring weekends and even throughout summer! We’re going to celebrate National Gin & Tonic Day with a twist, though — and taking note from The Minimalist Baker by adding coconut water to it. Cheers!

Coconut Gin & Tonic recipe courtesy of The Minimalist Baker

Ingredients:
2 ounces gin
2 ounces coconut water
2 ounces tonic water
juice of 1/2 lime (1-2 Tbsp)

Directions:
1. Add ice to a serving glass and top with lime juice, gin, tonic water, and coconut water
2. Stir and garnish with fresh mint or basil (optional)
