Autumn is a beautiful time of the year — the falling of the leaves, the over-the-knee boots, and of course pumpkin-everything. Our obsession with pumpkin foods continues, today with this yummy pumpkin pie oatmeal.

We know how busy mornings are, and we know that quick breakfasts are sometimes a must. That’s why we incorporated quick oats with yummy seasonal flavors that’ll have you energized and ready for your day!(If you do have more time in the AM feel free to use steel-cut oats instead.) This oatmeal recipe is also great for a late-night snack, as it satisfies hunger and sweet pumpkin-pie cravings everyone is bound to get at least once per season.

P.S. Have fun with toppings too! The night before you can roast walnuts, or make candied pecans that you can throw on top of your oats the next day.

Pumpkin Pie Oatmeal

Ingredients
1 cup Quick Oats
1/2 cup pumpkin puree
1 and 3/4 cup of almond milk (or milk of choice)
1 teaspoon ground flax seed
1 teaspoon cinnamon
1 teaspoon pumpkin spice
1 pinch nutmeg
1 teaspoon raw honey
white chocolate chips for garnish (optional)

Directions
1. In a small sauce pot, add the milk and honey and heat on medium high for 20 seconds.
2. Add the quick oats, flax, pumpkin puree, cinnamon, pumpkin spice, nutmeg, and stir together everything well.
3. Let cook (stirring frequently) for about 4 minutes until the consistency is how you like it.
4. Top with white chocolate chips, dash of cinnamon, and other fun toppings for garnish.
