Ah, the midnight snack. We all know that late night stomach growling that has your mind completely captivated on refrigerator raids rather than going to bed.
What’s a girl to do? Give in to temptation and gorge? Roll over and pretend you aren’t hungry? Get some exercise by running to the nearest pizzeria?
Don’t fret yet! We sat down with Natasha Feldman aka The Health Food Stalker to get her favorite healthy but satisfying midnight snacks to tame the rumble and ease the mind.
1) Homemade popcorn: Insanely easy – throw a bit of oil into a pot and 1/4 cup of popcorn kernels. Shake the pot every so often. When the popping stops, it’s done. Don’t overcook; just a few burnt kernels will ruin the whole batch. Add a touch of vegan butter and salt. You can also add a little chili, oregano, or any spice you prefer. Or, add a little agave and it’s just like kettle corn, but without all the fat and sugar!
2) Small fruit salad with flax seeds: Feel free to enjoy a bit of evening fruit, but to avoid a sugar rush, toss some ground flax meal on top. Delicious and nutritious.
3) Yogurt Parfait: Try a small bowl of your favorite yogurt, topped with a touch of honey, some ground flax, and a few berries. It is almost like dessert, but is bed time appropriate. Hooray!
