Set aside.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In a medium-sized bowl, whisk together the cake flour, baking powder, baking soda\u00a0 and salt. Set aside.\u00a0\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Using a handheld or stand mixer, fitted with the paddle attachment, beat the butter and\u00a0 sugar together on high speed until light and fluffy.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Add the egg and vanilla extract and mix until combined. Scrape down the sides of the\u00a0 bowl with a spatula as needed.\u00a0\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">With the mixer on low speed, add the dry ingredients to the wet, alternating with the\u00a0 buttermilk. Add the champagne and mix until just combined. Do not overmix.\u00a0\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Fill cupcake liners about 2\/3 full with cupcake batter.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Bake for about 18-20 minutes, or until a toothpick inserted into the center comes out\u00a0 clean.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Let cupcakes cool on a wire rack.\u00a0<\/span><\/li>\n<\/ol>\n<p><b>For the Frosting\u00a0\u00a0<\/b><\/p>\n<ol>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">In a small saucepan, bring the champagne to a boil over medium-high heat. Once boiling, lower heat to medium and let simmer until the champagne reduces to about 1\/8 of a cup. This<\/span> <span style=\"font-weight: 400;\">will take about 5-7 minutes, but be sure to keep an eye on it. <\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Once you have reduced the champagne down, remove it from the heat and let it cool.<\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Using a handheld or stand mixer, fitted with the paddle attachment, beat the butter and powdered sugar together on low speed until fully combined. <\/span><span style=\"font-weight: 400;\">\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A<\/span><span style=\"font-weight: 400;\">dd in the vanilla extract, heavy cream, and reduced champagne. Once everything is well combined, beat on high speed until light and fluffy.
