Christine, a FFF Board Advisor, has created an amazing and hearty veggie-packed Irish Beef Stew that\u2019s as delicious as it is nutritious.&nbsp;<\/p>\n<p><strong>Irish Beef Stew<\/strong><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n2 lb beef tenderloin (or top sirloin), cubed and marinated<br \/>\n1 large onion, chopped<br \/>\n6 cloves garlic, minced<br \/>\n1 tsp fresh thyme<br \/>\n1 tsp olive oil<br \/>\n\u00bd cup whole wheat flour<br \/>\n2 cups water<br \/>\n1 \u00a014.5 oz. can fire roasted tomatoes<br \/>\n1 \u00a014.5 oz. can tomato sauce<br \/>\n2 cups sliced carrots (or 4 carrots)<br \/>\n1 cup beef broth<br \/>\n3 potatoes (1.5 lb) cubed<br \/>\n1 \u00bd cup frozen peas<br \/>\n1 cup frozen green beans<\/p>\n<p>Real Food Brown Gravy Mix<br \/>\n2 tsp corn starch<br \/>\n1 tbsp Worchester sauce<br \/>\n1 tsp beef broth<br \/>\n\u00bd tsp black pepper<\/p>\n<p>Marinade<br \/>\n1 tbsp olive oil<br \/>\n2 garlic cloves minced<br \/>\n\u00bd tsp sea salt<br \/>\n\u00bd tsp fresh pepper<br \/>\n\u00bc tsp cayenne pepper<br \/>\n\u00bc tsp red pepper flakes<\/p>\n<p>Preparation<br \/>\n1) Mix marinade ingredients together and add the beef to coat. Cover with plastic wrap and marinate for 1-2 hours in fridge.<\/p>\n<p>2) Dredge the beef in the flour and shake off excess.<\/p>\n<p>3) On medium-high heat, add olive oil, thyme and meat to a large pot. Brown for 10-15 minutes.<\/p>\n<p>4) Add onions and garlic to pot and cook for an additional 5 minutes. Next, add fire-roasted tomatoes, tomato sauce, broth, potatoes, and carrots. Bring to a boil then reduce to a simmer for 40 minutes.<\/p>\n<p>5) Add frozen peas and string beans for an additional 5 minutes.
