Something about caramelized carrots and butternut squash gives us cravings we&#8217;re not even mad about. And when a plethora of spices and flavors meet some of our favorite vegetables, we get real giddy.<\/p>\n<p>Luckily for us, the chef over at <a href=\"http:\/\/twoforksnyc.com\/\" target=\"_blank\">Two Forks in NYC<\/a> gave us a recipe that blesses the taste buds and makes you come back for more &#8212; a roasted squash bowl that&#8217;s loaded with flavor and nutrients. It&#8217;s so good you&#8217;ll become hooked like we are!<\/p>\n<h3>Squash Bowl with Roasted Harissa Carrots<\/h3>\n<p><b>Ingredients:<\/b><\/p>\n<p><b>Roasted Carrots<\/b><br \/>\n4 large carrots<br \/>\nSalt to taste<br \/>\nBlack Pepper to taste<br \/>\nHarissa spice to taste<br \/>\n1 sprig thyme<br \/>\n1 lemon<br \/>\n1 tablespoon olive oil<\/p>\n<p><b>Organic Spaghetti Squash<\/b><br \/>\n2 organic spaghetti squash<br \/>\nThyme 1 sprig<br \/>\nRosemary 2 sprigs<br \/>\nSalt to taste<br \/>\nBlack pepper to taste<br \/>\nHarissa spice to taste<br \/>\n1 tablespooon Red wine vinegar<br \/>\nOlive oil<\/p>\n<p><b>Tzatziki sauce<\/b><br \/>\n667 grams Greek yogurt<br \/>\n233 grams cucumber<br \/>\n67 grams red onion<br \/>\n1 garlic clove<br \/>\n3 grams of dill<br \/>\n18 grams lemon juice<br \/>\n13 grams olive oil<\/p>\n<p><b>Butternut Squash Slaw<\/b><br \/>\n1 butternut squash<br \/>\n1\/2 cup carrot<br \/>\n1 green apple<br \/>\n1\/4 cup dried cranberries<br \/>\n410 grams goat cheese<br \/>\n365 grams buttermilk<br \/>\n72 grams maple syrup<br \/>\n45 grams olive oil<br \/>\n22 grams apple cider vinegar<br \/>\nLemon to taste<br \/>\nSalt to taste<br \/>\nPepper to taste<\/p>\n<p><b>Directions:<\/b><\/p>\n<p><b>For roasted carrots<\/b><br \/>\n1. Peel and cut carrots into \u00bd moons, then toss with olive oil, spices and thyme. Roast in preheated oven at 450 degrees until browned and cooked through. Finish with lemon.<\/p>\n<p><b>For spaghetti squash<\/b><br \/>\n1.Cut squash in half and remove seeds, and season squash with everything but vinegar.<br \/>\n2. Roast at 400 degrees, flesh side down, for 35 minutes.<br \/>\n3. Shred squash using two forks, and season with more olive oil and red wine vinegar to taste.<\/p>\n<p><b>For tzatziki sauce<\/b><br \/>\n1. Blend cucumber, onion, garlic and dill.<br \/>\n2. Whisk into yogurt, with lemon juice and olive oil.<\/p>\n<p><b>For butternut squash slaw<\/b><br \/>\n1. Bring goat cheese to room temperature.<br \/>\n2. Shred squash and carrots through an attachment on robot coupe. Julienne apples and chop dried cranberries, toss together like a salad.<br \/>\n3. Whisk goat cheese, buttermilk, maple syrup, olive oil, apple cider vinegar, lemon and salt and pepper.
