Looking for a quick sauce recipe that doesn’t involve a can opener? This tomato-based pasta dish is super easy to make, is perfect for lunch or dinner, and tastes absolutely delicious! (Yep, you’ll have a hard time convincing your friends that it was homemade!)

Load this your dish up with all of your favorite sautéed veggies, top with your choice of fromage, and use any type of pasta you like. We prefer rigatoni pasta for this recipe because the noodles tend to fill up with saucy goodness, and surprise your mouth with different bites of vegetables. As long as you get the base (sauce) down, your options are endless!

Rigatoni Pasta With Vegetables in Quick Red Sauce

1 tablespoon extra virgin olive oil
5 tablespoons tomato paste
2 tablespoons water
1/2 pound of rigatoni pasta (you can choose your pasta), cooked al dente then drained
1 large onion, sliced
1 cup frozen peas
2 tablespoon pine nuts, toasted
parsley for garnish
salt and pepper to taste

1. In a large skillet, add the extra virgin olive oil, onions, and salt and pepper on medium high heat, and cook for 7 minutes, or until onions are caramelized. Set aside.
2. In same skillet, add the tomato paste and stir to get onion bits from the bottom of the pan, then cook for 3 minutes.
3. Add the water in the skillet with tomato paste, and let cook for another 3 minutes.
4. Add cooked pasta, caramelized onions, toasted pine nuts, parsley, and frozen peas into skillet and cook together for 2 minutes, until peas are vibrant green. Salt and pepper to taste.
*When adding other vegetables to this dish, make sure they are cooked and set aside (like we did with onions) before adding to the skillet with pasta. This will ensure proper doneness, and will preserve flavor of vegetables.
