Whether you’re into sushi, sashimi, or poké, everyone knows that going raw is super trendy right now. But if raw fish just ain’t your dish, we’ve got a yummy substitute that you’re sure to find delish.

We turned to Chef Dakota Weiss of Santa Monica, California’s Sweetfin Poké who gave us a veggie-filled recipe we’re loving. Packed with sweet potato, carrots, avocado, cucumber, minced serrano, and topped with a Ponzu-lime sauce, this bowl is as healthy as it is flavorful.

Sweetfin Poké’s Vegetable Poké – Signature Bowl

Serves 5 people (each portion 1 cup)

1 cup sweet potato (steamed)
1 cup carrot (raw)
1 cup edamame (steamed)
1 cup cucumber (raw)
1 cup avocado
1 serrano, minced
(For a 5 cup batch add)
2 tablespoons mixed toasted sesame seeds
2 tablespoons chopped scallions

For sauce:
2/3 cup Ponzu
1/2 cup soy sauce
4 tablespoons lime juice
1/2 cup Mirin
4 tablespoons rice vinegar
1 tablespoons sugar

Small dice each ingredient, mix together with sauce and serve over a bed of steamed brown rice, steamed bamboo rice, kale, or some kelp noodles. Enjoy!
