Ah, avocado toast: the most basic option on the menu, and yet the most delicious. Nothing excites us more than when we see a new version of our fave breakfast classic — so we decided to make one for you guys to make at home.

Black beans mashed with avocado add a whole new dimension of flavor, while also providing uh-mazing protein content. We topped the toast with a small dollop of greek yogurt to give a tangy flavor, which really ties the meal together. This avocado toast can easily be turned vegan simply by omitting the yogurt.

Yep, “basic” just became “brilliant.”

Black Bean Avocado Toast

Ingredients:
1 avocado
2 slices thick-cut multigrain toast, sliced
1 lime, juiced
1/2 cup black beans, strained and rinsed
1 teaspoon salt
1 teaspoon pepper
cherry tomatoes, for garnish
plain greek yogurt, for garnish
Directions:
1. Mash the avocado until it looks like a chunky guacamole, then add the beans and mash/fold them into avocado mixture.
2. Add salt, pepper, and lime juice to the avocado-black bean mixture.
3. Toast the bread until golden brown, then top with avocado mixture.
4. Finish by garnishing cherry tomatoes and a small spoon of greek yogurt, and any additional salt and pepper to taste.
