FALL 2018 FABFITFUNTV PARTNER

The last thing you want to do after a long day is spend another couple hours in the kitchen making dinner. Trust us, you’re not alone on that one.

Toby Lowenfels, a busy mother of three, was also frustrated with the lack of simple dinner recipes, so she created DinnerIn20 — a weekly email newsletter, which includes four recipes that require only 20 minutes of your time (yes, you read that right!). But, don’t worry — just because the recipes are quick and easy to make, doesn’t mean it skimps on quality and taste.

From a one-pan shrimp and couscous dish to a delicious eggplant rounds recipe, we’re featuring our favorite DinnerIn20 recipes on FabFitFunTV (if you’re not a member yet, sign up today!)

Meanwhile, check out our interview with Lowenfels as we discuss where she finds inspiration for her recipes, her tips for kid-friendly meals, and five ingredients she always has stocked in her fridge.

Where do you find inspiration to create new and original recipes?
My friends and email subscribers are constantly replying to my newsletters with recipe recommendations and it’s always helpful to learn from fellow parents about what works for their families. I source most of my recipes online, then work to cut as many extraneous steps and ingredients as possible while making sure the dinners still taste good.

Any tips for feeding kids?
My number one question from subscribers is how to deal with picky eaters, and I always tell them to take it easy. Don’t pressure kids to eat a certain food. Instead, focus on introducing them to as many different ingredients and variations as possible. Make dinnertime fun! It’s all about consistency and your job is to make sure they have something nutritious on the table (almost) every night.

Any advice for working women who can’t find time to cook?
Prep as much as possible in the morning before you leave for work. Get all of your chopping out of the way so when you come home, you can throw your ingredients together. Try to stay organized by keeping up-to-date grocery lists and cleaning out your cupboards as often as possible.

What are five ingredients you always have in your fridge/pantry?
Fridge items: spinach, eggs, chicken, cheese, and rosemary.
Pantry items: orzo, olives, olive oil, diced tomatoes, and minced garlic in a jar.
