Our 9-year-old niece recently told us that she is now a vegan…except for hot dogs and pizza.
We’d have to say that real vegans are more dedicated than her…and often hungrier on Thanksgiving when the giant stuffed turkey tends to be the star of the meal.
But at FabFitFun we think the real, underappreciated stars should be the fresh, flavorful seasonal fruits and veggies that brighten up every T-day feast!
So in honor of hungry vegans everywhere, we have some fabulous recipes for a very vegan Thanksgiving courtesy of our favorite macrobiotic dining destination, M Café in Los Angeles!

French Lentil & Radicchio Salad
M Café combines organic French lentils with hand-torn radicchio for a hearty, earthy, nutrient-dense winter salad dressed in a Red Wine & Shallot Vinaigrette. The protein is pumped with homemade tofu “chevre” crumbles, and chopped maple-glazed walnuts.
Kabocha Squash & Adzuki Bean Soup
This savory and sweet, super hearty, vitamin-rich soup is just what you need to warm up on a chilly Thanksgiving night. The zesty ginger scallion relish gives the dish a fabulous little kick.
Seitan Pot Pie
Classic comfort food gets a nutritious vegan twist in this veggie pot pie that features fab fall veggies like carrots, mushrooms and rutabaga combined with chicken-style seitan in a creamy white sauce, all baked up in a flaky, dairy-free puff pastry dough that is available at Whole Foods.
