Thirsty Thursday: Thin Mint Julep

It’s the second most wonderful time of the year: Girl Scout cookie season! Now we know that your New Year’s resolutions are still going strong, and we don’t want to ruin the hard work you’ve put in by tempting you with cookie delights like those little girls in green skirts do. (Yep, they’re even more sabotaging than the girl who stole your boyfriend in eighth grade.)
But we do want you to enjoy our second favorite season, so we’ve found a delicious slimmed-down cocktail inspired by America’s favorite cookie: The Thin Mint Julep! That’s right, this sip by Slim Pickins Kitchen is skinny, it’s minty, and it’s chocolaty goodness at its finest.
The drink is made with fresh mint, stevia powder, chocolate vodka, and creme de cacao muddled with ice water. And at less than 160 calories, you’ll save yourself the trouble of working off that entire box of Thin Mint cookies!
Slim Pickins Kitchen’s Thin Mint Julep
1 cup water
2-3 sprigs of fresh mint (and more for garnish)
2 tsp of Stevia powder
1 oz. Godiva chocolate vodka
½ oz. Creme de Cacao
1. Pour one cup of water in a saucepan and bring to a boil.
2. Once boiling, lower heat, add mint leaves and stevia and stir. Simmer on low for 10-15 minutes.
3. Once syrup is ready, add ice, vodka, and creme de cacao to a glass, stir in 2 tablespoons of the syrup, and top off with cold water. Stir to combine and add mint to garnish.
