Avocado Salsa Fresca
This heart-healthy side is the perfect accompaniment to any Mexican dish or just as a dollop on a baked tortilla chip.
1 ripe avocado, peeled and diced
2 tablespoon lime juice
1 large tomato, diced
1 yellow bell pepper, diced
1/2 cup diced red onion
1 jalapeño pepper, seeded with membranes removed, minced
1 clove garlic, minced
1/4 cup (packed) cilantro leaves, chopped
1/2 teaspoon ground black pepper
Salt, to taste
1. Place avocado and lime juice in large bowl and toss gently to coat. (This will prevent the avocado from browning.)
2. Add tomato, yellow pepper, onion, jalapeño, garlic, cilantro, and black pepper. Toss gently to combine. Add salt to taste.
