Avocado Peppermint Ice Cream

There’s no better summer treat than ice cream, and the great thing about this recipe is that it doubles as a fab mousse — you know, in case you’re unable to get it from the blender to the ice cream maker without eating it all first. However you eat it – we’re giving a big thanks to the fab Chef Kenney!

Ingredients:
5 medium avocados, peeled and pitted
1/2 cup coconut water
1/2 cup agave, coconut nectar, or honey*
2 tablespoons coconut butter
1 tablespoon peppermint extract
2 teaspoons vanilla extract
Pinch of salt
1/2 cup cacao nibs (optional)

Directions:
1. Blend all ingredients until smooth. Stir in cacao nibs, if desired.
2. Process through an ice cream maker according to manufacturer’s directions.
*If you want to omit the sweetener, you can substitute 1⁄2 cup coconut water and add a few drops of stevia, to taste. This will make the texture icy, but it will still taste good.
