Meatless Monday: Spicy Tofu Chili
It’s almost spring, and that means we’re revving up for cook-off competition season! Yep, from pies to ribs to everything in-between, we love a good prize-winning meal. And Thursday is National Chili Day — the celebration of one of our fave competitive dishes!
And while plenty of the world’s best chili chefs have been whipping up hearty versions of the signature soup this month, we had to go and find a tasty vegetarian version to indulge in! This super quick meal can be made in a snap, and uses either House Foods Premium or Organic Tofu for a zesty high-protein dish.
1/2 package (7 ounces) House Foods Premium or Organic Tofu Med Firm or Soft, drained and crumbled
1 15 ounce can chili beans or low-fat chili
1 1/2 teaspoon chili powder
1 teaspoon garlic powder
1/3 cup chopped green onions
1/3 cup grated fat-free or low-fat cheddar cheese (optional)
1. Coat pan with non-stick cooking spray.
2. Over medium-high heat, stir-fry crumbled tofu with beans, garlic and chilipowder.
3. Cook uncovered for 7-9 minutes so liquids evaporate and flavors blend.
4. Sprinkle with green onions shredded cheese before serving, if desired.
