Meatless Monday: Join the Club
A vegetarian version of the classic sandwich
Ahh, the club sandwich — the all-American classic lunch that is for members only. Or…is it? We found a recipe for this meatless meal that finally allows vegetarians in the club!
As serious sandwich lovers and hummus connoisseurs, we were elated when we stumbled across this vegetarian club sandwich recipe! The super tasty sandwich uses a mixture of chickpeas, fat-free yogurt, tahini, garlic, ground cumin, and lemon juice in lieu of bacon, turkey, and other meaty ingredients.
Perfect for an autumn picnic, or cut up small and served as an hors d’oeuvres at a party, we love the veggie-filled, sprout-tastic little sandwich. Plus, we’re so happy to finally be members of the club! (Can we be treasurer?)
3 tablespoons plain fat-free yogurt
2 tablespoons water
1 tablespoon lemon juice
1 tablespoon tahini (sesame seed paste)
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 garlic cloves, peeled
1 15 1/2-ounce can chickpeas, drained
12 (1-ounce) slices whole-wheat bread
2 cups shredded Bibb lettuce
8 tomato slices, cut to 1/4-inch thickness
4 red onion slices, cut to 1/4-inch thickness
1 cup cucumber sices, cut to 1/8-inch thickness
4 cups (about 4 ounces alfalfa sprouts
1. Combine first 8 ingredients (through chickpeas) in a food processor; process until smooth.
2. Spread 2 tablespoons hummus over 1 bread slice; top with 1/2 cup lettuce, 2 tomato slices, 1 onion slice, 1 bread slice, 1/4 cup cucumber, 1 cup sprouts, and 1 bread slice. Cut sandwich diagonally into quarters; secure with wooden picks. Repeat procedure with remaining ingredients.
