Meatless Monday: Crimson Quinoa

If you want to know where quinoa comes from, you Google it. If you want to translate the lyrics to Gangnam Style, you Google it. If you want to ogle at pictures of David Beckham shirtless, you Google it.

Yep, the peeps over at Google are pretty smart. That’s why they hired Chef Charlie Ayers to head up the food service program at the company’s headquarters! The chef, who focuses on healthy, sustainable cuisine now owns Calafia Cafe and Market A Go Go in downtown Palo Alto, CA, has even cooked for luminaries such as Bill Clinton, Steve Jobs, Bill Gates, Robin Williams, Bono, the members of Coldplay, and Gwyneth Paltrow.

And now he’s bringing us his delicious recipe for crimson quinoa! Perfect atop a salad or as a side, this dish tastes just as good as it looks. With roasted beets, celery, red onion, and hints of lemon, the recipe is sure to be a hit at your healthy holiday parties. Yep, and you didn’t even have to Google it!

Crimson Quinoa

2 cups water
1 cup quinoa, rinsed and drained
1/2 teaspoon ground cumin
1/2 cup celery, blanched and diced
1/4 cup dried currants
1 cup roasted red beets, small diced
1/2 cup beet puree, (2 ea. roasted beets, 8 tablespoon apple juice)
1 tablespoon lemon zest
1/4 cup chopped parsley
1/4 cup red onion, small diced
1 bunch of chives cut into batons

1. Place water, quinoa, and cumin in a small sauce pan and bring to a boil.
2. Reduce the heat, cover, and simmer for 15 minutes or until all liquid is absorbed.
3. Allow quinoa to cool.
4. In a bowl, mix together all ingredients and season, to taste, with salt and pepper.
5. Refrigerate for 1 hour before serving.
6. Garnish with lemon zest and chive batons.
