Skinny Snack Alert: Blueberry Almond Kale-Nola

You guys. Coachella is less than one month away. One. Month. Do you know what that means?! There are less than 30 days left to get our bodies in tip-top shape for those super cute cutoffs and crop tops! Thankfully, one of our besties, Whitney English, is a health and fitness expert and blogger, and she sent us the most amazing recipe for a new healthy snack: Blueberry Almond Kale-Nola. What is “kale-nola” exactly? Think granola minus the oats and using kale as a substitute. It sounds scary, but trust us. It’s really yummy and will keep you from going for far worse snack foods in your pantry! So we are doing what any good girls’ girl would do and we are passing it on to you. Enjoy!

1 large bunch kale
6 Medjool dates
1/2 cup diced mango
6 tablespoons unsweetened shredded coconut
1/2 cup unsweetened dried blueberries
1/2 cup sliced almonds
1 teaspoon cinnamon
1/2 teaspoon salt

1. Wash kale and cut into small pieces, removing stems, then dry kale thoroughly
2. Soak dates in cold water for half an hour
3. Combine soaked dates and mango in a food processor or blender, then puree
4. Add cinnamon, salt, and two tablespoons of the coconut
5. Massage the mixture into the kale, covering all leaves
6. Stir in the blueberries, almonds, and remaining coconut
7. Scatter kale on a baking sheet lined with wax paper and bake at 300 F for about 20-25 minutes
