Wolfgang Puck’s Savory Squash Soup
Yep, this savory squash soup will have you scooping up seconds in no time. Squash has tons of yummy fiber, vitamin C, and folate – making it one of the healthiest choices for feasting this fall! For the heavy cream, you can use fat-free half and half as a substitute. When making creamy soups, this is your closest counterpart to heavy cream as an ingredient.
Easy is this soup’s middle name (if it had a middle name). The minestrone soup is a family favorite and even though the recipe is made for one, go ahead and throw in all sorts of leftover vegetables to serve up bigger portions! The ingredient list doesn’t have to be exact, although minestrone soups commonly have beans, onions, celery, carrots, tomatoes, and stock. Best of all, as the author points out, you can easily use a vegetable stock instead of a chicken one to have a vegetarian version of the dish!

Hot in Cleveland actress Valerie Bertinelli shared this Jenny Craig recipe on Good Morning America for a filling, low-calorie soup. This 63-calorie choice can be skimmed down even further by skipping the last step of topping with cheese and using rosemary instead!
This recipe yields 6 servings but with a little high school math, we can trim that down to just one hearty bowl. You can dunk cornbread in it, as suggested on the recipe, which is healthy when eaten in moderation. We recommend trying the kale version, because kale is one of the healthiest vegetables around. Kale also thrives in cooler seasons, which makes it the ideal ingredient for this recipe!
Jamie Oliver's Corn Chowder
Admittedly, chowder is never our go-to restaurant option because it’s the comfort food that usually comforts you into a food coma. So we went with expert Jamie Oliver on this recipe that uses 1% milk instead of the usual cream. The corn chowder can easily be made into your dinner meal. He suggests adding shellfish to stay fuller longer with the extra protein!
Southwestern Chicken Soup
We love that this recipe uses avocado! It’s a super-healthy spin on the usual chicken soups you find. Avocado is the healthy type of fat that you want to include in your diet! There are many other ingredients in this recipe that we definitely approve of – cumin, chicken breast, and all those vegetables! But if you’re looking for even more of a nutrition boost (#healthnutprobz), we suggest using brown rice instead of white rice.
