Yep, this savory squash soup will have you scooping up seconds in no time. Squash has tons of yummy fiber, vitamin C, and folate – making it one of the healthiest choices for feasting this fall! For the heavy cream, you can use fat-free half and half as a substitute. When making creamy soups, this is your closest counterpart to heavy cream as an ingredient.

The minestrone soup is a family favorite and even though the recipe is made for one, go ahead and throw in all sorts of leftover vegetables to serve up bigger portions! You can dunk cornbread in it, as suggested on the recipe, which is healthy when eaten in moderation. We recommend trying the kale version, because kale is one of the healthiest vegetables around. Kale also thrives in cooler seasons, which makes it the ideal ingredient for this recipe!
Jamie Oliver's Corn Chowder
Admittedly, chowder is never our go-to restaurant option because it’s the comfort food that usually comforts you into a food coma. So we went with expert Jamie Oliver on this recipe that uses 1% milk instead of the usual cream. The corn chowder can easily be made into your dinner meal. He suggests adding shellfish to stay fuller longer with the extra protein!
